Chilli Bean Noodle Soup

774

This is one of those recipes that never stays the same twice — and that’s exactly why it earns a permanent place in your cooking rotation. Chilli Bean Noodles are all about adaptability, comfort, and making the most of what you already have in the fridge.

At its heart is a deeply savoury, gently warming chilli bean broth, rich with umami and just enough heat to wake everything up without overpowering the bowl. From there, it’s completely yours to build. Any stock will work, any noodles you fancy, and whatever toppings need using up — pulled meat, a soft-boiled egg, crisp vegetables, or even leftover roast bits from the night before.

This dish is perfect for those moments when you want something nourishing and satisfying but don’t want to follow rigid rules. Some days it’s light and brothy, other days it’s hearty and piled high. Swap turkey stock for chicken or veg, change the noodles, add more heat or keep it mild — it all works.

Think of this as a framework rather than a fixed recipe. A bowl that evolves with your leftovers, your mood, and what’s to hand. Simple, flexible, and endlessly comforting — the kind of meal you’ll find yourself coming back to again and again.
