Alternatives to MSG

Do I need to add MSG powder to get that takeaway flavour?

Short answer: no, you don’t.

A lot of classic Chinese cooking gets its deep savoury flavour from natural glutamates, not from adding MSG powder directly.

Ingredients like soy sauce, oyster sauce, and dried Chinese mushrooms are all naturally rich in glutamates. When you cook with them, you’re building that same umami depth people associate with “MSG flavour” – just through ingredients rather than a powder.

Soy sauce brings saltiness and savoury complexity, oyster sauce adds richness and a rounded sweetness, and Chinese mushrooms (especially when soaked and used with their soaking liquid) deliver a big hit of natural umami.

So if you season well, layer your flavours, and use these ingredients properly, you can get that bold, comforting takeaway taste without ever touching MSG powder.

And that’s how Chinese kitchens have been doing it for generations.
