Light Soy Sauce vs Dark Soy Sauce – What’s the Difference?

What is light soy sauce?

Light soy sauce is thinner, saltier, and lighter in colour. It’s mainly used to season food and bring out savoury flavour (umami) without changing the colour too much.

Think of it as your everyday seasoning soy — similar to salt in Western cooking.

What is dark soy sauce?

Dark soy sauce is thicker, slightly sweeter, and much darker in colour. It’s used more for colour and richness rather than saltiness.

It gives dishes that deep, glossy takeaway look.

When should I use light soy sauce?

Use light soy when you want to:

  • Season stir-fries

  • Add savoury depth

  • Marinate meat or vegetables

  • Build flavour in sauces

When should I use dark soy sauce?

Use dark soy when you want to:

  • Add colour to noodles or rice

  • Create a rich glaze

  • Darken braised dishes

  • Give that classic takeaway appearance

Can I swap one for the other?

Not really — they do different jobs.
If you only have light soy, your dish may taste right but look pale.
If you only use dark soy, your dish may become too sweet or heavy.

Pro takeaway tip

Most Chinese takeaway dishes use both — light soy for flavour, dark soy for colour. That combination is one of the secrets behind authentic takeaway cooking.
