Roast Duck in Plum Sauce

869

Some dishes have that perfect balance of flavours — the kind that make every bite feel complete — and Roast Duck in Plum Sauce is one of them.

Originating from South China, this classic pairing combines crispy, aromatic roast duck with a glossy plum sauce that dances between sweet, tart, and subtly spiced. The richness of the duck is perfectly lifted by the fruity tang of the sauce, creating a dish that feels indulgent yet beautifully balanced.

What makes it such a winner is its versatility. It’s elegant enough for a dinner party, quick enough for a midweek treat, and satisfying every single time. The addition of pineapple adds a refreshing brightness, cutting through the sauce and giving each mouthful a burst of tropical sweetness.

It’s the kind of dish that never fails to impress — rich, comforting, and full of flavour. Whether served with steamed rice or simply on its own, Roast Duck in Plum Sauce proves that sometimes, the simplest combinations are the most unforgettable.

Ingredients

  • 1 Cup Oil Rice Bran, Ground Nut
  • 1 Tsp Garlic paste
  • 1 Tsp Ginger Puree
  • 230 g Pineapple Chunks
  • 3 Tbsp Plum Sauce
  • 1 Tsp Sugar
  • 1 Tbsp White Rice Vinegar
  • 2 Tbsp Water

Instructions

Make the sauce

  • Combine the plum sauce, sugar, rice vinegar and water in a bowl, mix well and set to one side.

Cook

  • Place a non-stick wok over a medium to high heat, add the oil and fry the duck breast, turning regularly for even cooking, for 2-3 minutes until crispy and heated all the way through. Remove the duck breast and place on kitchen paper to drain, tip away any excess oil and place the wok back over a medium to high heat. Add the garlic and ginger, fry for a few seconds until fragrant, then give your sauce mix a stir and add to your wok. Once the sauce comes to the boil, remove from the heat.

Serve

  • Carefully arrange the pineapple chunks on a serving plate, slice the duck breast into bite size pieces and arrange on top of the pineapple and pour the sauce over the top.
