Fideuà — Why This Spanish Noodle Dish Belongs on Man with a Wok

I’m a self-confessed Nood-A-Holic — someone who’s constantly chasing good food, good flavours, and good ideas from wherever they come. And that’s exactly why this dish deserves a place on the Man with a Wok website.

Fideuà might come from the Spanish coast, but the moment I first tasted it, it felt familiar. It’s built on principles I love — layering flavour slowly, respecting the pan, and letting simple ingredients do the heavy lifting. Instead of rice like a traditional paella, thin vermicelli noodles are toasted first, which gives them this deep, nutty character and helps them soak up all that rich seafood flavour without turning soft or heavy.

What really speaks to me about this recipe is the technique. Toasting the noodles, building a flavour base, then leaving everything alone so the bottom crisps and caramelises — it’s a little bit patience, a little bit restraint, and a lot of reward. That crispy layer at the bottom is pure gold and reminds me so much of the textures we chase in wok cooking.

I’ve included fideuà here because Man with a Wok has never just been about Chinese food — it’s about noodles, flavour, and cooking methods that connect cultures. Food travels, evolves, and tells stories, and this dish is a perfect example of how one ingredient can take on a completely different identity somewhere new.

So if you love noodles as much as I do, consider this a little invitation to step outside the usual and try something that feels both different and strangely familiar. That’s what being a good-a-holic is all about.

Fideuà – Toasted Vermicelli Paella

Fideuà is paella’s noodle-loving cousin from the Valencian coast. Instead of rice, you toast thin vermicelli noodles in olive oil, then simmer them in a rich seafood stock until tender. The result is deeply savoury, slightly smoky, and packed with flavour—often finished with prawns, squid, and a good dollop of aioli.

Ingredients

  • 250 g Thin Vermicelli Noodles broken into pieces
  • 3 tbsp Olive Oil
  • 1 small Onion diced
  • 3 cloves Garlic minced
  • 1 Red Pepper diced
  • 2 medium Tomatoes grated
  • 400 g King Prawns Shell on is preferred
  • 200 g Squid sliced into rings (optional)
  • 750 ml Fish Stock good quality
  • 1 tsp Smoked Paprika
  • Pinch Saffron optional
  • Salt to taste
  • White Pepper to taste
  • Fresh Parsley chopped
  • Fresh Lemons cut into wedges
  • Aioli optional

Instructions

Toast Noodles

  • Heat 1 tbsp olive oil in your pan over medium heat.

Add the vermicelli and toast, stirring frequently, until golden brown.
This step is crucial—it gives fideuà its signature nutty flavour.
    Remove and set aside.

Build the flavour

  • Add the remaining olive oil.
    Add onion (3 minutes)
Add garlic and red pepper (2 minutes more)
Stir in the grated tomato and cook down until thick and slightly jammy (about 5 minutes).

Add Seafood and spices

  • Stir in:
    smoked paprika
    saffron
    squid (if using)
    Cook for 1–2 minutes.

Add noodles and stock

  • Return the toasted noodles to the pan and stir to coat.
Pour in the stock and spread everything evenly.
Arrange prawns on top.
Do not stir from this point on—this helps form the prized crispy base.
Simmer gently for 10–12 minutes, until the noodles are tender and most of the liquid is absorbed.

Rest and finish

  • Remove from heat.
Cover loosely and rest for 5 minutes.
    Finish with:
    chopped parsley
    lemon wedges
    aioli on the side
